Like mine with salt and pepper and once one side is done, I sprinkle with freshly grated parm cheese. I've done this in the pan and on the grill. Added near the end of grilling, it softens and adds a lot of flavor. Then prep the romaine by removing any brown or limp leaves on the edges. I also like it with crumbled bleu cheese on top. Cut the romaine hearts in half through the stem. They should come out looking slightly charred, not burnt.
